   Baking is just math. Learn the "rules" for hydration (water to flour ratio), for a start. A decent mixer (KitchenAid, or such) is your friend. Use good flour and fresh yeast. I have a dozen or so really good bread and muffin recibes. Feel free to ask, if you like.
