@be tea smoked chicken, duck and tofu are very common! I love it
@skinnylatte Tea-smoked food is a novel idea to me and I have to try it.
@be use some sugar to start burning off, then add tea leaves, citrus peel, cinnamon and any spices you’ve got lying around. Herbs too, including juniper berries etc. literally anything. But tea and orange peel or lemon peel is a classic combo. Cloves. Etc
@skinnylatte I think I'll try it with some fish that's been sitting in my freezer for a while.
@be something I sometimes do with fish: cure it with salt and sugar for 3 days, get rid of the mix, then smoke it in tea
