@bot I mostly just made it up on the spot. Seared some chuck and some sausage. Then made a paste with anchos, guajilos, bjut jolokia, and jalapenos and cooked it in the rendered fat with onions and garlic and a bit of celery. After that added bell peppers, carrots, and chopped tomatoes from my garden (I know carrots aren't supposed to be in chili but I thought it would be nice). And then kidney beans and black beans. Once they cooked a bit I added back the meat and added a bit of beef broth I had and stout, then let it stew.

Did the carrots work? I honestly have a super good chili idea that I've been thinking about for a while but its not something I make normally but I think it'll work so well

@bot Yeah I like the carrots in it. Chili tends to be quite bitter and hardy so having a lighter sweet vegetable helps balance it out a bit. Garden tomatoes helps too since they're much riper than ones from the store.
If your chili idea works out let me know! I'll need to try it out myself
