Been watching these videos/shorts of chefs cooking steaks on YouTube, and it always looks absolutely phenomenal. I hope I can cook steaks like them one day.

@matty @trucku don't time it by steak surface temp. time by steak air temp, and surface temp of cast iron skillet on cooking device.

I cook my steaks to about 120, but haven't found the perfect method yet. I think I would like to try using a skillet rather than a grill, then baste.

Yeah, that shit looks amazing, most are too difficult to acomplish after drinking all day. Plus i dont want to cook indoors while runnin the a/c. Ive resorted to the probe thermometer. 300 degrees on the traeger. Flip at 90 degrees pull off at 135. Hitting the exact temp every time makes a difference.

@matty @trucku you start with a steak at a known internal temp, with a known thickness.
Put it on a metal object which you know can supply enough heat to cook in uniform way. Flip 3 times to ensure even cooking and you're golden or perhaps Maillard
