Yes, that is the old-fashioned method. The newer in-sauce technique produces superior results, but relies on the glue floating to the top during baking. That is why experience chefs froth the glue with helium before adding to the sauce. -

Im confused. I thought the sauce was first to be applied to the foundation, only after which an appropriate spread of glue can be applied.But perhaps it should go on first to keep both sauce and cheese non-moving.
Perhaps ask for a clarification?
