I suspect what happened with Google Gemini is there is some sort of DEI/AI Ethics checklist to ensure the images generated are of diverse ethnicities.

And some engineer figured out the fastest way to pass the process is to literally never generate images of white people.

This happens a lot in big tech where people start optimizing to get through the process than to actually build what customers want or the business needs.
