   alot of vegan gravy recipes seem to rely on soy sauce I'm guessing for savoriness? why not use Umami powder?

     @Rasp you definitely can, umami powder wasn't something you could get in average US grocers until like 2020ish and that's going to impact your recipes

     you just have to account for the liquid difference
