@Viking WTF? Americans don't put it in the bird? That's retarded. We don't do Turkey or Thanksgiving here. But the charcoal chicken place across the road has stuffing in every chicken, and I would expect nothing less.

As a young inexperienced foreign dude, I always filled the cavity with stuffing, and I was happy with it.
Later, I learned it was not "safe", and to my than huge surprise, Americans were making stuffing (dressing?) on the side.
I know very little fat and juices come out of the meat before it reaches 100 to 120 degrees, would it make sense to take out the turkey at 120 degree temp, and then put in the stuffing?
