I don't actually know how that works in the USA, but here in the UK you're entitled to have 28 paid holidays and 1 personal day per year (minimum)

Book all the days you can get and give your notice the day before going on holidays if they're two weeks or more. If your boss doesn't let you book your holidays, you may need to explain them that you don't want to lose them because you're leaving. Maybe your company pays for the unused holidays at the end of the contract, but again, I don't really know how this applies to your country or state, but it should be in your contract anyways. ;)
