I've enjoyed playing @streetcomplete lately, but I've realised that since my edits are public, it completely doxxes me to anyone who can find my account.
Is there any way around that?

OSM doesn't want anonymous edits, and almost regardless of how you randomize or shuffle your data, it's going to be relatively easy to reconstruct your movements and who you are. It's simply a fact of the matter from recording and posting that sort of positional data.
So the short answer seems to be "no" unfortunately. Chedk out this issue for some more discussion: https://github.com/streetcomplete/StreetComplete/issues/3507
