I just want to know if I can simply copy the Android folder over with USB file transfer from the old phone to my computer, and then to my new phone, and if there is some way that I can stop that data from passing through Google's servers as an unnecessary extra step.

All I want is for phone 1 to talk to phone 2 and transfer the data in an orderly fashion.

It won't, I'm afraid. :-/

I think mostly helped on balance, but definitely not sure if enough to motivate the bypass through the Google surveillance machine.
