Does anybody here know if I'll have any trouble running a Cat6 UTP wire in the same trench as my electric? They will be in separate conduits. Do I have to get aluminum conduit for the UTP wire for shielding?

You might have issues with shitty cat5, but with cat6 you're good even in the same conduit with power lines. If you want to be extra on the safe side, just use shielded cat6. Just don't try runs longer than 100m
