     Last week I had TWO customers expressly tell me they were buying pastries for a teatime, and one instance was two guys in FULL EDWARDIAN REGALIA with wigs and everything, it was glorious

     keep the butter cool, don't over-work the dough, chill them before baking, and keep frozen unbaked scones in the freezer so you always have fresh scones

     right now I have brown butter corn scones and lemon, ginger, and fermented blueberry jam scones in my freezer.

     through a twist of fate I now have 3 food scales at home and I can't find anyone on whom to offload one of them
