i had a bag of potatoes that was getting old. i'm going to turn them into frozen potato wedges for the air fryer.
i'm blanching them right now. after that, i'm going to deep fry them at a low temperature to give them a pale but solid crust before i freeze them down.
they're going to be mushy if you just thaw them, but if you put them straight in an air fryer, i think it's going to revive the crust and give them a golden brown finish.
