     The instance https://mathstodon.xyz uses that syntax :)

     Mastodon don't, Akkoma neither.

     However Misskey and Calckey both show it correctly?

     Some instance already show it. If clients like Fedilab implent it then maybe others will follow.

     If it is too niche (as appatently not everyone is fluent in Latex), then people interested will use Fedilab.
