Restaurants using the same tadka for dishes is my basic standard for distinguishing between good versus bad Indian restaurants. So many places all use the same tomato-onion-garlic base and everything tastes the same. My favorite places here in Chicago are where the dishes are made fresh, taste distinct from others, and where someone has seemed to put thought into making it their own.
Do you have any rules like this when evaluating places?
