   Blanched vegetables for the stew. Blanching is one technique that only seems to happen when canning vegetables. I think that stew is greatly improved by not having extra, non-aromatic vegetables soaking up salt and delicious beef flavors. Each vegetable can be treated right and pulled at the desired doneness, instead of mushes of various colors.
