Two oval banettons prepared with rice flour. This may be optimistic. Based on the size of that dough ball, if it doesn't de-gas somewhat when separating/shaping I'm going to have to snag a circular one in short order (I only have two oval ones).

I'm going to divide and shape at 8am rather than 9am even though my kitchen in the winter generally tends to the high end of FWSY time estimates.
Time to get everything ready.
