Boiled lemons removed from water. Sitting, cooling.

Things are smelling good.
The lemons went on a "low simmer" (actually no signs of boiling but very hot) for 16 hours.
(This is what I read some expert did - its much longer than the recipe above.)
And now the fruit has been removed from the fluid to cool before handling/cutting/pithing.)
