Think of milk pasteurization like cooking chicken - we don't eat chicken raw because we know it needs to be cooked to be safe, right? Milk is actually pretty similar. Back in the day (we're talking pre-1900s), people got sick from milk ALL THE TIME. Then this really clever scientist named Louis Pasteur figured out that heating milk to just the right temperature could make it safe while keeping all the good stuff we love about it.
