Something that doesn't get addressed enough is that by the time the Jesus stories got compiled into the Bible we all recognize, he had been dead several hundred years and Christianity had been fully co-opted as the state religion of Rome.
The first council of Nicea (which among other things is credited with creating the Nicene Creed (the official 'what Christians believe) decided what gospels and letters and all were and were not canon.
