@RamonaQuimbey Rotelli cooked al dente, steamed veg (I used broccoli, cauliflower and green beans), marinated artichoke hearts, handful of green stuffed olives, sliced, plus protein (I used poached chicken; protein is something you can skip).
The trick to it all is the dressing. I use red wine vinaigrette, usually store bought. You mix the ingredients in a large bowl, add a full bottle of vinaigrette, let marinate in the fridge overnight. When you serve, you may need more vinaigrette, so always have another on hand.
You can vary the amounts, the veg (fried bell peppers, onions, celery are all things I’ve thrown in), the protein, the vinaigrette to taste (I sometimes use a raspberry one that was very passable; it works best with a dressing for fruit salad as long as it’s not too sweet). You can also replace the green olives with crumbled feta.
If I take it to a party, I never bring home leftovers. All gone.
@RamonaQuimbey Mine is good. Sweet, salty, and a touch vinegar. Plus, healthy.
